It’s that time of year!  The scent of roasting green chilies permeates grocery store parking lots, farmer’s markets, and major intersections.  Whether topping a slice of pizza, curling up with eggs and potatoes in a warm breakfast burrito, or spicing up the smother on a thick, juicy pork chop, green chile is a staple in the New Mexico diet.  So, La Cueva… How do you go green?
